What is it?

Himalayan apricots, treasured for their distinctive fruity aroma and delicate balance of sweetness and tartness, are slowly candied through a patient process of gradual sugar infusion.

Over time, the fruit develops a deeper, rounded sweetness while retaining the character that makes Himalayan apricots so special. Crafted in small batches, each piece is an expression of the harvest, shaped by patience rather than haste.

Ingredients:

Apricot, mishri (rock sugar), invert sugar, citric acid, cinnamon, star anise.

Flavour:

Rich and fruity, with delicate apricot tang, mellow caramelised sweetness and subtle warming spice.

Texture:

Tender and chewy, with a luscious bite and a concentrated fruit finish.

Origin:

Himalayan apricots harvested in the Kullu Valley (Himachal Pradesh).

Craft:

Slowly candied in small batches over multiple rock sugar baths.
